In addition to the three Michelin stars, René Redzepi’s Noma is a global phenomenon that has inspired young chefs and now, like a true rock star, is touring the world.
Two years ago, it was named the world’s best restaurant by “The world’s 50 best restaurants” and now, after Tokyo, Sydney, Tulum, New York, it opens a pop-up restaurant in Kyoto – hosted in the spaces of Kengo Kuma’s Ace Hotel – for six (yes, just six) coveted dinners.
The project envisions the entire team of 95 people, from apprentices to cooks to owners, moving to Japan for a few weeks to add to their twenty-year journey full of experiences, learn about a new culture, and gain a new perspective.
An adventure that will inspire the project’s transformation with an eye to the next twenty years.
The kitchen’s philosophy will be to use local raw materials while being inspired by Japanese design but without becoming a Japanese restaurant.
